Coffee Origins
MOGIANA, BRAZIL & JAEN, PERU
The Mogiana Region, spanning São Paulo and Minas Gerais, is famed for its rich soils, high altitudes, and mild climate—perfect for coffee cultivation. Mogiana is known for smooth, chocolatey flavours and gentle acidity.
Jaen, in Peru’s Cajamarca region, is celebrated for its exceptional coffee, grown at high altitudes with ideal microclimates. The bourbon and caturra varieties from this area are prized for their vibrant flavours, offering a delightful balance of sweetness, fruitiness, and complexity in the cup.
Process
NATURAL - BRAZIL / WASHED - PERU
The natural, or dry, process is the oldest way to process coffee and brings out a bean’s sweetness and depth. Whole coffee cherries are dried under the sun, letting the fruit’s sugars soak into the bean. Once dried, the outer layers are removed. This method gives the coffee a bold, fruity flavour and a rich, full body.
The washed, or wet, process focuses on clean, bright flavors. The cherries are pulped to remove the skin, then the beans ferment in water to break down any sticky fruit left. After a thorough rinse, the beans are dried. This results in crisp, vibrant flavors with natural fruity and acidic notes.

BRAZIL - José and his brothers run four farms in São Sebastião do Paraíso, known for exceptional coffee. Since the 1990s, they’ve embraced modern farming techniques and new varieties. Now, they focus on sustainability, refining processes, and delivering outstanding coffee.
PERU - Our Peru Microlot comes from dedicated smallholder farmers in Jaen, Cajamarca, a region celebrated for its ideal coffee-growing conditions. These farmers cultivate exceptional beans at high altitudes, producing vibrant, complex flavors that showcase the care and expertise behind every harvest.
