Steps
- Grind – Fine, like caster sugar.
- Dose & tamp – 18 g coffee, even and firm tamp.
- Pull shot – Aim for 38 g yield in ~28 seconds.
- Serve – A syrupy espresso with caramel sweetness, gentle red-berry brightness and smooth chocolate finish.

Papua New Guinea (PNG) is a relative newcomer to the specialty coffee scene. The remote locations of the nation’s smallholders—who produce 85% of total coffee in the country—combined with historically-poor infrastructure has made the transition to specialty difficult. Nonetheless, the country is working towards innovative solutions that will hopefully lead to better quality coffee and improved livelihoods for the nation’s smallholder coffee producers.

Process
Washed
The natural, or dry, process is the oldest way to process coffee and brings out a bean’s sweetness and depth. Whole coffee cherries are dried under the sun, letting the fruit’s sugars soak into the bean. Once dried, the outer layers are removed. This method gives the coffee a bold, fruity flavour and a rich, full body
